How to cook brats

    Brats are traditionally cooked in beer or stock, with aeromatics like garlic and onions.

    You want to avoid boiling them, you want to simmer them. This accomplishes two things, adds good flavor and raises the internal temperature gently so the fat doesn’t all leak out.

    Right before you eat them, just kiss them on the grill to crisp them up.
